Healthy Apple Bars With Oats
An easy and delicious recipe for healthy apple bars with an oatmeal crust and a cinnamon-y no sugar apple filling. This flourless fall dessert recipe is naturally gluten-free and ready in 40 minutes.
Ingredients
Crumble
- 1 1/2 cup oats
- 3/4 cup cashews
- 2 1/4 tbsp maple syrup
- 1 1/2 tbsp water
- 3 tbsp coconut oil
- Pinch salt
Apple Filling
- 2 apples
- 1 tbsp coconut oil
- 1/2 tsp cinnamon
- vanilla
Instructions
- Chop the apples into apple chunks and saute with coconut oil and cinnamon for about 5 minutes, covered with a lid. Stir occasionally to prevent burning. If needed add a tbsp of water and if desired, add a little bit of vanilla to the apples (I did it last time and loved the addition). Once sauteed, set aside.
- Grind the oats and cashews into flour.
- Mix this flour with melted coconut oil, a pinch of salt, water and maple syrup to create something like shortbread cookie dough.
- Preheat the oven to 180C/350F.
- Spread about 2/3 of the dough in a small baking pan lined with parchment paper. (I used a stainless steel food container from IKEA, it’s 8×6 inches or 21x15cm) Use your hands to press the dough down to create a good base for the apples.
- Then add the layer of sauteed apples.
- Top it all with the crumble, pressing the dough between your fingers to create good chunks of crumble.
- Bake for 25-30 minutes or until golden brown.
- Let cool, cut into bars and enjoy!
- Store leftovers in the fridge.

How To Make Healthy Apple Bars With Oats

Chop the apples into chunks and saute with coconut oil and cinnamon for about 5 minutes, covered with a lid. Stir occasionally to prevent burning. If needed, add a tbsp of water and if desired, add a little bit of vanilla to the apples (I did it last time and loved the addition). Once sauteed, set aside.

Grind the oats and cashews into flour.

Mix this flour with melted coconut oil, a pinch of salt, water and maple syrup to create something like shortbread cookie dough.
Preheat the oven to 180C/350F.
Spread about 2/3 of the dough in a small baking pan lined with parchment paper (here I used a stainless steel food container from IKEA, it’s 8×6 inches or 21x15cm).

Use your hands to press it down, so you can create a good base for the apples. Then add the layer of sauteed apples. Top it all with the crumble, pressing the dough between your fingers to create good chunks of crumble. Bake for 25-30 minutes or until golden brown.
