Garlic Shrimp Pasta Ingredients
Pasta. You can use any type of pasta you like – shapes don’t matter. I actually had gluten-free pasta. Not that I recommend it. Use whatever you have.
Shrimp. Use peeled and deveined shrimp. I used frozen and I let it thaw completely in some water before using in the recipe.

Tomatoes and basil. I always love adding some fresh vegetables and herbs to lighten up a creamy meal like this one.
Mascarpone. We’ll use this together with the pasta water and Parmesan cheese to make the creamy sauce for the pasta. If you don’t have mascarpone, you can use cream cheese.
Garlic. You cannot leave out the garlic, it makes the whole thing complete.
Parmesan, olive oil and chili pepper. The chili pepper is very optional, I actually threw it in only because I had some at home. Parmesan and olive oil are however essential.

How To Make Garlic Shrimp Pasta For Dinner
Dinner can’t get more delicious, comforting and easy than this pasta recipe! Here’s what you need to do:
Cook your pasta according to package instructions. Make sure to reserve some of the pasta water – the water you use for boiling. We will be using that to make the sauce.
Mince the garlic, wash and chop the basil and the tomatoes.
Then grab a cooking pan, heat it up and saute the shrimp in olive oil with one garlic clove and the chili pepper (if you want it) for 4-5 minutes, stirring from time to time. Once the shrimp is pink, place onto a plate and reserve for later.
Now to the same pan, add the tomatoes and saute for 2-3 minutes. Then add in the mascarpone, a tbsp of Parmesan cheese as well as 1/2 cup of the pasta water to make the sauce. Stir for 1-2 minutes, as you do this the sauce will thicken and you might need to add more pasta water or if you don’t have it – a little bit of water.
Then add in the pasta, the rest of the garlic, the basil and the shrimp.
Stir until the pasta is fully coated with the sauce and serve with some Parmesan cheese.
Enjoy immediately!

How To Store
If you have any leftovers, you can put them in an airtight container and store in the fridge. The next day, reheat in the microwave or on the stove in a pan with a little splash of water.
