It’s creamy, it’s full of flavour and it’s a good way to use up some vegetables.
Okay, so…I may, or may not have made this easy creamy pasta with crumbled feta cheese and tomato every day for an entire week. It is so good and so simple, yet perfect for an easy dinner when you’re left with a block of feta cheese, macaroni, garlic and the other vegetables you promised yourself to eat this week.
If you’re not in the mood for salad, you seriously can make this instead – similar ingredients are used! And no, this is not the “viral” tiktok pasta, it’s a no-bake, different version of a feta cheese pasta.
Ingredients
Seriously, whatever you have in your fridge. But here’s what I put into mine:
- Quick cooking macaroni (the ones I used cook in 3 minutes). If you don’t have quick cooking pasta, you could also use whole grain pasta (or any type) and cook it before in some salted water.
- Feta cheese. Use your go-to brand of feta cheese!
- Olive oil, chili powder, a juicy tomato and tomato paste. We need these to make the sauce. And the sauce is pretty good.
- Garlic. Also for the sauce, but deserved its special place on the list.
- Fresh basil and fresh parsley. You could also try different variations and add arugula, spinach, cilantro or dill.
How To Make Spicy Feta Pasta in 12 Minutes
A great thing about this recipe is that you can make it within seriously no more than 12 minutes. Using quick cooking pasta helps, because you can add it directly to the pan, but if you don’t have it, you could start cooking penne, fusilli or shells right when you start chopping your vegetables, add them to your sauce in the end and the recipe will take you around 15 minutes.
Here’s the way I made it:
- Chop the tomato, basil, parsley and mince the garlic.
- Saute the tomato with the chili powder and olive oil for 2 minutes. Add the tomato paste and about half a cup of water, then add in the pasta and feta cheese. Cover with a lid and let cook for about 2 minutes.
- Stir in the minced garlic and cook for about 2 more minutes.
- Then stir in the parsley and basil and turn the heat off.
- Serve immediately and enjoy!
Now if you’re using the cooked pasta, I recommend adding less water and at the step when you add the garlic – you don’t even need to cover with a lid and cook for long – just make sure to use a juicy tomato.
Options
Here the sky is the limit. So many things will go well with this pasta. You could throw in some roasted red peppers, eggplant, pickled jalapeños or even chicken if you want to add more protein to this easy meal. Other good vegetable additions would be arugula, spinach or kale.
