10-Minute Vegetarian Quesadilla
Imagine a world where you can make your own delicious pizza at home…Wouldn’t it be great? I’ve asked this question many many times throughout my life, mainly myself, and the answer was always yes.
And now, after years of experimentation, I found a great way to do it.
The shortcut is by using a tortilla instead of spreading an actual dough and kneading it and getting dusty from the flour. I know, this is kinda lazy and not really “homemade”, but it works and it’s absolutely delicious.
Vegetarian Quesadilla Ingredients
To make a yummy quesadilla that is also pretty healthy I used these ingredients:
- a large tortilla
- fresh mozzarella (shredded or pulled)
- cherry tomatoes
- garlic
- olives
- mixed greens from the garden – arugula, basil and some parsley
- tomato paste
- cream cheese
You can, of course, add whichever ingredients you want and whatever you have at home.
How To Make Vegetarian Quesadilla in 10 Minutes
The Making of this quesadilla happens in 10 minutes and also 5 steps:
- spread the tomato paste, cream cheese and garlic over the tortilla as a sauce or “spread”
- top with the vegetables and cheese
- fold in 1/2
- toast in a non-stick pan until golden brown
- eat!

10-Minute Vegetarian Quesadilla
Simple, delicious 10-minute healthy vegetarian quesadilla that is basically pizza! This easy recipe is great for using leftovers you have in your fridge.
Ingredients
- 1 tortilla
- 1 tbsp tomato paste
- 1 tbsp cream cheese
- 1 garlic clove, minced
- 2 cherry tomatoes, chopped
- 2 Tbsp arugula and parsley, chopped
- 1 Tbsp olives, pitted and chopped
- 1/2 cup fresh mozzarella (diced or shredded) or other cheese
Instructions
Spread the tomato paste, cream cheese and garlic over the tortilla.
Top 1/2 with the chopped tomatoes, olives, arugula and parsley and add the mozzarella.
Fold in 1/2.
Toast in a non-stick pan at medium-high until golden-brown.
Slice in 2-3 pieces and serve immediately!
Notes
You can use any type of greens you have - spinach, basil, even kale will all work. You can also use another type of cheese if you don't have fresh mozzarella.
