Make dinner in 10 minutes with this super easy vegetarian quesadilla recipe! It’s filled with fresh mozzarella, some vegetables and it’s kinda healthy, but it doesn’t taste too healthy. It tastes good. Really good. Like pizza.
10-Minute Vegetarian Quesadilla
Imagine a world where you can make your own delicious pizza at home…Wouldn’t it be great? I’ve asked this question many many times throughout my life, mainly myself, and the answer was always yes.
And now, after years of experimentation, I found a great way to do it.
The shortcut is by using a tortilla instead of spreading an actual dough and kneading it and getting dusty from the flour. I know, this is kinda lazy and not really “homemade”, but it works and it’s absolutely delicious.
Vegetarian Quesadilla Ingredients
To make a yummy quesadilla that is also pretty healthy I used these ingredients:
- a large tortilla
- fresh mozzarella (shredded or pulled)
- cherry tomatoes
- mixed greens from the garden – arugula, basil and some parsley
- tomato paste
- cream cheese
You can, of course, add whichever ingredients you want and whatever you have at home.
