This week I’ve been harvesting some of my last tomatoes this summer. I always welcome this time with mixed feelings. On the one hand, I get nostalgic because summer is going to be over soon. Gone are the sunny days and the fresh tomatoes and cucumbers from my garden.

On the other hand, I am excited about the change of seasons. Excited about the cool breeze and being able to go out in the afternoon without feeling like I’m walking inside a furnace.

I’m also excited about preserving the produce that I’ve planted and grown on my own during the summer. I’ve been canning tomatoes and peppers and there’s more to come.

I’ve also been making a ton of salads and tomato-based recipes, so that I don’t miss out on that fresh, sweet tomato taste. Here I want to share a salad I make quite often – it’s a simple tomato cucumber salad with a tiny refreshing twist – mint!

Making this tomato cucumber salad requires a very basic cooking skill: chopping vegetables and throwing them into a salad bowl. Here are the exact steps:

  • Wash and chop your tomatoes, cucumber, and onion
  • Thinly chop the mint
  • Place it all in a bowl and add olive oil
