Here are 12 things to do with fresh raspberries when these tasty fruits are in season again and you’ve got lots of them, too many to handle! Including a few ways to preserve them and delicious raspberry recipes!

One of my favorite fruits, raspberries are among the most flavorful and delicious berries belonging to the Rosacea family. They are perennial shrubs producing small, bright, sweet, and juicy fruits.
In my opinion, raspberries are perfect the way they are and I love eating them straight off the stem. But I’ve also got some ideas on things you can do with raspberries when you’re lucky enough to have too many on your hands! You do not want to let them get moldy and spoil before you get to enjoy them!
Fresh raspberries are available in the summer months from July through September and this is the best time to buy and preserve some of these healthy fruits so that you can enjoy them throughout the year.

1. Freeze Raspberries
One of the best things to do with fresh raspberries, in order to preserve them for longer is freezing. You can use the frozen berries in smoothies or as toppings for desserts and breakfasts.
Once you’ve got the fruit, put the raspberries in a colander, then wash them under running water. Let drain, then gently place onto a cloth towel to remove excess water. Layer a piece of parchment paper onto a baking sheet and arrange the raspberries in a single layer. That way they will keep their shape and won’t stick together. Flash-freeze them for an hour or two in the freezer. Once completely frozen, transfer them to Ziploc bags and press the bags gently to remove any excess air and then seal them tightly.
2. Make Raspberry Jam
Another thing you can do with lots of raspberries is to turn them into jam! Yes, cooking will lead to some nutrient loss, but it is still a great way to preserve the berries for quite some time. Moreover, the flavor of homemade raspberry jam is second to none. All you need is a saucepan, raspberries, sugar, and some lemon juice. Boil all the ingredients until the jam thickens and then transfer it to jars. For a more specific recipe, check out this one.

3. Make Raspberry Compote
Yet another great way to preserve raspberries! Making a compote is quite similar to making jam. The only difference is that it is less thick and less sweet than jam. You need only three ingredients as well as 15 minutes of your time. Once your compote is ready, you can use it straight away, store it in the fridge for as long as 5 days, or even freeze it.
Alternatively, you can place the jars in a boiling water canner or a big pot with a rack on the bottom. Then, cover the jars with water, bring to a boil, and let them simmer for as long as 10 minutes. Once the jars have cooled off, store them in the pantry. They will be good enough for an year.
