Summer Harvest Salad

I know it’s almost the end of the season and you’re probably looking for pumpkins already, but that won’t stop me from sharing my favorite summer harvest salad.

Try this easy and delicious healthy summer harvest salad! It's the perfect side for your dinner or lunch and goes really well with meat, fish, falafels, potatoes or bread.

To be fair, it is my favorite, because it’s the salad I make 3-4 times a week, probably even daily, since it’s what we make with the vegetables we grow. So, I have no choice but to make it a favorite. Plus it tastes good and is perfect with fish, meat, bread, falafels, I even served it in my Mediterranean fish wraps!

We’ve got zucchini in there, roasted and raw peppers, arugula, basil, onion and of course – tomatoes! You can also throw in a cucumber or two, but my plants haven’t been very successful this year. I can’t figure out what it is, but I’m very stingy with the cucumbers, since we rarely have some. Here’s the recipe, feel free to change things according to your harvest!

Ingredients

  • 1/2 cup grilled pepper
  • 1 cup zucchini, pan-roasted/grilled
  • 2 tomatoes, chopped
  • 1 cup sweet green pepper, chopped
  • 1 garlic clove, minced
  • 1/2 red onion, chopped
  • 1 cup arugula, chopped
  • a handful of basil
  • Salt, pepper, olive oil
  • Optional: 1 tbsp Feta, olives or capers

Instructions

  1. If you don't have them yet - sear some zucchini and peppers in the pan with some olive oil and salt for about 2-3 minutes on each side.
  2. Chop the tomatoes, arugula, pepper, basil and red onion, mince the garlic.
  3. Add everything to a bowl, season with olive oil, salt and pepper to taste, if needed add some lemon juice (I don't like it with tomatoes, but it's a personal preference - do what you like!). Add in some feta cheese, olives or capers - or all and enjoy!
