Spicy Chicken Quesadilla With Feta Cheese
I’m not even gonna pretend like this is a brand new recipe. It’s totally a variation of my feta cheese quesadilla that I made a while back and then filmed again last week. Still, this recipe is a total winner on its own too! You’ll love the flavors! It’s spicy, it’s salty from the feta and olives, it’s kinda sweet from the tomatoes, it’s umami too and it’s just so delicious!
Ingredients for This Quick and Easy Chicken Quesadilla
- Feta cheese
- Greens of choice
- Shredded chicken
- Tomato paste
- Black pepper
I know the list isn’t short, but you probably have most of these things already at home and if you don’t, feel free to experiment and improvise to make this dish your own.
How To Make Spicy Chicken Quesadilla In 10 Minutes
One word: Leftovers. Cooked some chicken on the weekend? Shred it and use it for the filling here. Everything else, you probably have in the fridge/pantry.
Here’s what you need to do to make these quesadillas:
- Mash the feta cheese with avocado in a bowl
- Mix in the rest of the ingredients
- Spread on ½ tortilla
- Toast the tortilla in a pan on both sides until golden brown
- Slice and eat!
You’re ready, this thing takes 10 minutes and if you make a salad to go along while the tortillas are toasting – you’ve got healthy dinner figured out.
Options here are endless. You can use other herbs, you can leave out ingredients if you don’t like them, you can choose different types of tortillas to make these even healthier, you can make them spicier. This recipe is quite forgiving, so feel free to experiment and work with whatever you have!

- ½ cup feta cheese
- ¼ avocado
- ½ cup greens
- 1 small tomato
- 3 garlic cloves
- 1 cup shredded chicken
- 1 tsp tomato paste
- handful olives, pitted, chopped
- 2 smaller tortillas
- pickled jalapeno, sliced
- black pepper
- Mash the feta cheese and avocado in a bowl. Mix in the chicken, greens (I used some arugula, mint and basil from the garden - but anything will work), tomato, garlic, pepper, tomato paste and olives.
- Spread 1/2 of the mixture on one half of a tortilla, top with jalapenos, then fold.
- Toast in a pan with olive oil until golden brown on both sides. Slice and enjoy.
This recipe makes 2 servings and I recommend serving with some salad or a sauce of choice. If you’re making these for the family make sure to double the recipe.
