Roasted Red Pepper Dip
I made this Mediterranean-inspired roasted red dip with the other day after I had roasted some peppers from my garden. I just can’t get enough of it! I’ve been having it with tortilla chips, on the side with salads, in wraps, on cucumbers for a quick and healthy snack and it’s simply divine.
I love making this dip every year after roasting some red peppers and this recipe makes a lot, so something to look forward to during the next few days after you make it.
Ingredients
Roasted Red Peppers. You will need cored and peeled roasted red peppers. I used sweet pointed red peppers, but bell peppers will work just as well. You can see how I deseed, roast and peel my red peppers here.
Tomato. You just need one small ripe tomato for this recipe.
Garlic. Cannot skip garlic in here.
Feta cheese. Or any type of white cheese you like and have available.
Parsley or other herbs. Mint or basil will also be great in this dip.
Salt and olive oil. Make sure to add the salt to taste as the last thing, once the dip is ready.
How To Make Roasted Red Pepper Dip
Add all ingredients, but salt to a blender or a hand blender.
Blend to desired consistency. You can leave the dip a bit chunky or make it very smooth. It entirely depends on your preference. I prefer mine somewhat in the middle, so I blend the ingredients until almost smooth.
The last thing you will do is add salt to taste and transfer the dip to a more appropriate container.
And that’s it, you’ve got your delicious red pepper dip ready to eat!
How To Store This Red Pepper Dip
This delicious vegetable dip will stay good in the fridge for between 3-4 days. Make sure to keep it in an airtight container.
How To Use This Vegetable Dip
You can use this dip like you would hummus. As a quick and easy snack with some cut-up vegetables, add it to bowls or wraps like this one, eat with some grilled meat and salad or simply spread it on a slice of toasted bread and enjoy!

- 350g/12oz roasted red peppers
- 3 garlic cloves
- 2 tbsp olive oil
- 1/3 cup crumbled feta cheese
- 2 tbsp chopped parsley or other herbs
- salt to taste
Instructions
- Add all ingredients to a blender withthe exception of salt.
- Blend until desired consistency. I blended my dip until almost smooth for about 20 seconds.
- Add salt to taste and transfer to a plate for serving.
- Store leftovers in the fridge for up to 3-4 days.
