If you're looking for easy healthier breakfast ideas that you can grab and go and won't cause huge blood sugar spikes, things to pack into your kids's lunch boxes, this flourless oatmeal feta breakfast bread is what you need.

I like to have this flourless oatmeal feta bread for breakfast or sometimes for lunch with some salad, or with my dinner. And sometimes if I’m still craving something something after lunch or dinner – I have it for dessert. Like, just trust me.

The closest thing to this flourless breakfast bread I can think of is milinka, which probably means nothing to you, if you’re not Bulgarian. Similar to banitsa, it’s a type of Bulgarian breakfast, but instead of phyllo, you use flour to make it. And it’s delicious, but unfortunately healthwise not an option for me at the moment.

Like Banitsa

Well in this version we won’t use flour, but oats and make this breakfast feta bread flourless. I started making this recipe a few years ago when trying to come up with something like banitsa that doesn’t send me on a blood sugar rollercoaster ride. This is it!
