If you love feta cheese, I’m pretty sure you’ll absolutely love this amazing feta cheese quesadilla recipe. It’s super delicious and it’s ready in 10 minutes. And if you’re like me, it will solve 2 problems for you: using up feta cheese and using up any leftover fresh herbs you have at home. This recipe is absolutely delicious, and listen, I used 3 cloves of garlic, because it’s 2020 and everyone’s wearing masks anyway, but you can use less if you want.
Feta Cheese Quesadilla Ingredients
- feta cheese
- avocado (if you don’t have avocado, it will also work, so don’t let that stop you!)
- greens – I used a mix of what I had in the garden arugula, mint and basil, but you can also use other herbs you have at home. Cilantro, dill, spinach – they will all be good for this quick recipe.
- small tomato
- black pepper
- garlic
- tortillas – feel free to use healthier tortillas if you have a healthy go-to brand.
How To Make Feta Cheese Quesadilla
It’s a super simple, quick and easy process.
- add all ingredients for the filling to a small bowl
- mash them with a fork
- take that mixture and spread it on 1/2 tortilla
- fold the tortilla in 1/2
- toast in a pan on both sides until golden brown
- slice
- enjoy!

Ingredients
- 1/2 cup feta cheese crumbled
- 3 garlic cloves, minced
- 1/2 cup basil & arugula
- 1 small tomato
- 1/4 avocado
- 2 tsp olive oil
- black pepper
- 2 tortilla
Instructions
- Mash the feta cheese with the avocado. Add the herbs, black pepper, 1 tsp olive oil, tomato and garlic.
- Spread this on 1/2 tortilla. Then fold in 1/2.
- Toast in a non-stick pan with 1 tsp of olive oil until golden brown on both sides.
- Slice and serve with this delicious everyday salad. Enjoy!
