Mediterranean Pita Pockets (Amazing!)

Garlic sauce, spicy pepperoncini paste, tomato cucumber salsa and perfectly slow-cooked meat…I’d fill all of my pockets with these and save them for rainy days. But today we’re using pita pockets and taking them to the Mediterranean. I don’t think pita pockets can be from anywhere else, but let’s not overthink it.

I mentioned in the last post that this Mediterranean recipe is one of the best things I’ve eaten in a while. And it is. It is SO good. I love every single thing in the filling separately, but together…they’re the Incredibles.

You can make the Mediterranean pita pockets for dinner, lunch and you can even meal prep most of the fillings like the meat and the garlic sauce too.

I used slow-cooked pork here, I don’t eat pork often, but I loved it in this recipe. However, if you’re not in the mood to cook, you can use any type of meat you like…For example, rotisserie chicken or whatever you have from the grill, even fish will do.

then meat and more salsa

You can also buy tzatziki or easily make it yourself instead of using the zucchini sauce – it will all work.

And if you don’t have pitas, you can use tortillas and wrap these or turn it into a messy sandwich using any kind of bread. If you’re really ambitious, you can even use lettuce as a wrap and make the whole thing low-carb and lighter. Many, many options – do whatever works for you!

Ingredients

For the Meat*

  • 1 pound/450g boneless pork steak
  • 4 garlic cloves, minced
  • 2 tsp cumin
  • 3-4 bay leaves
  • 1 tsp oregano, dried
  • 1 tsp thyme, dried
  • 1 tsp curry powder
  • salt and pepper

Tomato Cucumber Salsa

  • 1 cucumber, finely chopped
  • 2 tomatoes, finely chopped
  • 1 scallion, thinly chopped
  • 1 garlic clove, minced
  • 1/2 lemon, juice of
  • 1 cup arugula, thinly chopped
  • 2 tbsp fresh oregano leaves*
  • 1 tbsp capers or thinly chopped olives
  • salt and pepper
  • 1 tbsp olive oil

Zucchini in garlic sauce**

  • 1 cup roasted zucchini, chopped
  • 1 garlic clove, minced
  • 1 cup yogurt
  • 1 tsp olive oil
  • Salt and pepper

Additionally

  • 2 pitas to make 4 pita pockets
  • 2-3 tsp Pepperoncini paste (or any spicy sauce you like!)

Instructions

  1. For the meat, saute the garlic, cumin, bay leaves, curry powder, thyme and oregano for 30s to a minute with olive oil. Add in the meat and cook for a minute on each side. Then add ? cup water, salt and pepper - or use stock of choice. Bring to boil, then reduce and simmer with lid on at low heat for 50 minutes. Then remove the lid, turn the heat up for 5-10 minutes and try to shred the meat using a spatula. If it's not easy, take it out and shred on a plate with two forks. Add it back and stir gently, once the water has evaporated for 2-3 minutes.
  2. While the meat is cooking you can make the other fillings. For the tomato cucumber salsa add the ingredients to a bowl and mix together, adding some salt and pepper to taste.
  3. Zucchini Garlic Sauce: To a bowl add grilled zucchini, minced garlic, some and yogurt. Mix it all together and add salt and pepper to taste. If you don't have grilled zucchini or roasted, you can also use cucumbers and make tzatziki to speed things up.
  4. Once you've got all of these ready, it's time to assemble the pita pockets. Spread the garlic sauce on the bottom, some pepperoncini paste (or any other spicy sauce you like) over it, then spread some of the tomato cucumber salsa all over, then meat and again some salsa. And now it's time to enjoy!
  5. I hope you like these!

Notes

*chicken or other meat will work as well; if you don't feel like cooking sub for rotisserie chicken or something from the grill, fish works too!

**or use tzatziki
