My favorite memories from my childhood involve visiting my grandparents for the summer. They lived in a Bulgarian village at the border with Turkey and that village felt so remote. Pretty much at the end of the world.
For the longest time, my grandparents didn’t have running water in their house and everything was SO simple and natural. What they did have was chickens, goats, a wood stove and a yard full of vegetables. Back then, you couldn’t just buy whatever you wanted wrapped in plastic. You had to make it yourself. I remember they didn’t even have a store in the village and had to travel to the next one to buy one of the few things they didn’t always make themselves – bread.
I’m so grateful that I got to spend many of the first years of my life there and to experience life like it’s supposed to be. No phones, no plastic, just real life. From petting a little goat or holding a little yellow chick in my hands, through pulling carrots out of the soil, to running free everywhere…that childhood was such a blessing.
One of my favorite chores back then was collecting freshly laid eggs from the nests. My grandma would then, after a day of work, cook them to make a similar meal to what I’m sharing with you today – this Mediterranean breakfast egg scramble. The only differences were that she made it for dinner and without the cheese, way simpler. Then after she cooked the egg scramble and while we all were still eating it, she’d just fall asleep and nap for a few moments sitting. I always thought it was so funny and that poor woman was probably exhausted.
Still, every time I make this egg scramble it reminds me of exactly those moments. I didn’t like it back then, but now that I’ve grown up – it’s one of my favorite Mediterranean-style breakfasts and I truly hope you will love it as well!

Eggs. Of course, for the egg scramble, you need some eggs. Eggs are pretty healthy for you as they’re rich in protein, selenium, B12 and several other B vitamins.
Vegetables. You know I usually say, you can use whatever you have, and you can, but for this specific recipe – you do need red peppers, scallions and tomatoes. These are crucial for the aroma and the sweetness they provide. Otherwise, yes – use whatever else you want to use, but don’t overload the scramble. I actually added some spinach and basil for some extra nutrition and flavor – leafy greens are great in here.
Feta Cheese and Olive Oil. We need these two ingredients to cook the eggs and to provide some saltiness to this Mediterranean breakfast dish.

How To Make A Mediterranean Breakfast Scramble
The process of making this vegetarian breakfast is wonderfully easy.
Start by washing and chopping all the vegetables – the peppers, the scallions, the tomatoes, the spinach, the basil…everything.
Then add the peppers and tomatoes to a pan with a little bit of olive oil. Saute for 1-2 minutes, then add in the scallions and spinach and saute for an additional 3-4 minutes until the tomatoes are no longer juicy.
Scramble in the eggs and feta cheese cooking together for about 2 minutes, not much longer.
And then your Mediterranean breakfast eggs are ready!
Options
There are plenty of ways to make a Mediterranean egg scramble for breakfast – you can omit or add in whatever you decide. For example, if you decide you don’t like the cheese, or if you’re dairy-free – add in some thinly chopped olives instead.

An Easy Meal Prep Option
If you decide you want to have this healthy Mediterranean breakfast every day, there’s an easy way to meal prep it for the week. Note that the recipe makes one serving, so adjust to however many servings you want to have and meal prep the following way:
- Sautee the vegetables as described, but instead of adding the eggs and feta cheese into the hot skillet, let the sauteed vegetables cool off.
- Mix the eggs, vegetables and feta together in a bowl.
- Put that mixture into a small baking pan.
- Bake for about 20 minutes or until the bake is golden brown on top and firm to the touch.
Once cool – slice and store in the fridge to have for an easy meal prep breakfast!

Ingredients
- 1 tomato, chopped
- 1/2 red pepper, chopped
- 1 cup spinach, chopped
- 1-2 scallions (about 1/4 cup)
- 2 tbsp crumbled feta
- 2 eggs
- 1 tsp olive oil
- A few basil leaves
Instructions
- Wash and chop the peppers, scallions, tomatoes, spinach and basil.
- Add the peppers and tomatoes to a nonstick pan with a little bit of olive oil. Saute for 1-2 minutes, then add in the scallions and spinach and saute for 3-4 more minutes until the tomatoes are no longer juicy.
