Looking for delicious healthy dinner ideas? These mashed potato and spicy shrimp bowls are definitely the answer to your dilemma. They’re full of flavor, satisfying and just amazing. You can make them from scratch in around 30 minutes.
You will need to multitask and be organized, but these shrimp bowls make a great weeknight dinner that will impress your loved ones. Or yourself. Whoever is there, WILL be impressed and love you forever. Just make sure if you’re cooking this for a family, to adjust the servings and to get everyone to help out in the kitchen. Can you smell it, can you smell it, can you smell it? Garlic’s in the air, in the whisper of everyone…Yep, these mashed potato and shrimp dinner bowls are a true garlic fest. We’ve got garlic shrimp in there, garlic mashed potatoes, tzatziki sauce and well- the non-garlic outsider here – a simple lettuce salad. Now, let’s take a more detailed look at what’s in the bowls.
Mashed Potato And Shrimp Bowls Ingredients
Shrimp. You can use any type of shrimp for this easy dinner recipe, as long as it’s peeled and deveined. You simply need to prepare them according to my spicy shrimp recipe right here. Adjust to your taste and add more or less spices, herbs and garlic. The best thing about shrimp, besides its taste, is the fact that it cooks really fast.
Mashed Potatoes. So for this, you could go two ways, as I explain here. Either make them super creamy and fluffy by adding milk and butter to the cooked potatoes or add a bit more flavor by adding some cheese of choice and a small amount of minced garlic. I actually just added 1 clove this time, as I find the tzatziki and shrimp provided enough garlic for my taste.
Tzatziki sauce. So for this sauce, you’ll need some plain yogurt, cucumber, dill (or herbs of choice), garlic, and salt. It’s definitely a must-have in these bowls or any other bowls for that matter. And it’s really easy to make – just mix the yogurt with thinly chopped cucumber, dill, and minced garlic, add salt and it’s ready. Super fresh and flavorful!
Lettuce salad. It might seem redundant, but this salad is a must-make as part of these bowls as it lightens it up and adds some antioxidants and additional textures and flavors to the bowls. You’ll need lettuce, some radishes (can also use cucumbers), dill, lemon, salt, and olive oil.
How To Make The Mashed Potato and Shrimp Bowls
Welcome to a lesson in multitasking and productivity. Making these mashed potato and shrimp bowls is pretty easy, but it takes a few steps/multitasking as there are many different things going on – shrimp, mashed potatoes, lettuce salad and tzatziki sauce. Each and every single one of these needs to be prepared, so here’s how to make the recipe the fastest way:
- Start with the potato mash. To do this, simply peel and boil potatoes in enough salted water. I usually cut the potatoes in slices and cooking through takes around 20 minutes. But boil until fork tender.
- Then make the tzatziki sauce and the salad. The reason I recommend doing this and not starting with the shrimp is that you want to have the shrimp while it’s still hot. The shrimp cooks much faster than the potatoes. But if you’re using frozen – let it first thaw in warm water for about 5-10 minutes.
- For the tzatziki simply chop thinly dill and cucumber, mince garlic and add these ingredients to the yogurt in a small bowl. Add in salt and mix well.
- For the lettuce salad, chop lettuce, thinly chop scallions and dill, chop a cucumber and add all these ingredients to a salad bowl. Make sure to chop some extra dill or basil for the shrimp too. Add in lemon juice, salt and olive oil and toss.
- Once you’ve made the salad and tzatziki and while the potatoes are still cooking, make the shrimp. Heat a pan and cook it with olive oil, minced garlic and chili powder. Stir through and keep stirring occasionally for 4-5 minutes. In the last 1-2 minutes add in the basil or dill and you’re ready!
- At this point, the potatoes should be fork-tender. Drain the extra water off and mash potatoes while still hot with milk of choice, a little bit of garlic (optional), and butter using a potato masher. Have a taste and add salt if needed.
- Arrange bowls with the potatoes, lettuce salad, then shrimp and tzatziki on top.
That’s it…weren’t those last 30-35 minutes crazy productive? I think they were. Serve the mashed potato and shrimp dinner bowls and enjoy immediately!
Options
These dinner bowls are super customizable. You can pretty much change each and every component. Although I do not recommend messing with the tzatziki sauce. Here’s what you can do:
- Use grilled, baked or pan-seared salmon, chicken or calamari instead of the shrimp.
- Add a different salad. If it’s summer and not spring when you make these bowls, you might want to opt for a simple tomato cucumber salad like this one.
- For a vegetarian version, you can go for tofu, grilled halloumi cheese or even grilled zucchini and omit the shrimp.
