This is another one of those recipes my daughter made and decided to contribute to this blog. It’s a super simple, few ingredients homemade apple cake.

What’s In This Apple Cake?

There are just 7 simple ingredients in this simple, yet addictive apple cake. You probably have them in your kitchen right now, let’s check:

  • sugar
  • coconut oil
  • an apple
  • flour
  • baking powder
  • eggs
  • vanilla

Yes? Well, now it’s time to make the cake.

How to Make This APPLE CAKE?

You only need a bowl and something to whisk or blend and a baking pan.

Blend the ingredients together, apple stays on the side. Pour the batter in the baking pan and top with the sliced apple. Bake at 350 F / 180 C.

Once the top is golden brown, take out of the oven and let the cake cool off. Then slice and enjoy!

More Options

This apple cake has the sweetest, most delicious vanilla flavor, but if you want to change things up here are some more options for you to try

Add cinnamon. Add a teaspoon of cinnamon to the batter and to the apples – it will bring a different, but also great flavor.

Saute the apple before: if you have a bit more time, you can saute the apples before spreading them over the batter. In this case, you’ll need two and not just one apple. Slice the apples and then cook in a large pan with coconut and cinnamon. Optionally you can add a bit of sugar here. In about 5-10 minutes the apples will be done and you can spread them over the batter.

Use butter. The recipe calls for coconut oil, but you can absolutely use butter instead. The reason my daughter made this with coconut oil was that we were out of butter. That said – coconut oil made for a very delicious, sweet coconut-y flavor.

Top with a crumble. If you want to make this cake into something super special, then you can top everything with a crumble. A crumble is easily made – 2 parts flour with 1 pard butter or coconut oil and 1 part sugar. Knead this into a crumbly dough, form small crumbles and top your cake. Bake and then serve warm with some ice cream…I know, it’s a completely different recipe, but we’re allowed to daydream, right?

Super delicious easy homemade apple cake that smells like vanilla! This delicious apple recipe is the perfect treat for an easy dessert or breakfast with your coffee or tea in the morning or afternoon.

Ingredients

  • 4 eggs
  • 3 heaping tbsp coconut oil
  • 4 heaping tbsp sugar
  • 5 heaping tbsp flour
  • 2 tsp vanilla
  • 1 tbsp baking powder
  • 1 apple, sliced

Instructions

    Preheat the oven to 180C/ 350F.

    Beat or blend together all ingredients except the apple until you get a smooth batter. The batter should be pretty similar in thickness to crepe batter. You can have a taste to determine whether the batter needs more sugar or vanilla. Just be careful, this batter is addictive, but not safe to eat too much of as eating raw eggs isn't the best thing you can do.

    Grease a baking pan with coconut oil or butter, or line with parchment paper. Pour in the batter evenly.

    Top with the apple slices and put in the oven.

    Bake until golden brown. The cake is done when a toothpick inserted in the middle comes out clean. (around 30 minutes, but please be sure to check on your cake after 20 minutes as ovens can be shockingly different!)
