I’ve got a healthy sausage vegetable pasta recipe that is perfect for dinner! To keep it healthier, we’ll use whole grain penne, lots of fresh vegetables, and fresh tomatoes as the base!

Healthy Sausage Vegetable Pasta
I was actually inspired to make this pasta by what I had at home and the class we took in Southern Italy last year…Usually, I like my pasta to be creamy, heavy and to basically knock me out for a few hours.
But during the class, we used very simple ingredients like tomato sauce, greens, garlic, olive oil and some grated Parmesan cheese. We didn’t add any meat, no cream cheese either (I’m starting to think it’s not Italian).
Naturally, I thought this can NOT be good. Now you might be waiting for some unexpected turn, but honestly, it wasn’t the BEST pasta I’ve ever eaten. It did not blow me away, but I still liked it. Maybe it was because we made it from scratch and I was in Italy. It might be. But this experience showed me that I don’t always need to add cream or cream cheese to pasta. Especially when you make it with fresh tomatoes and other veggies!
So, last time I found myself with grilled sausages, lots of vegetables to use up and whole grain pasta at home, I started craving that pasta. The one that didn’t blow me away. I guess it wasn’t bad after all. No cream or cream cheese in sight, but I did have Parmesan cheese and some mozzarella. Also added some spice and the whole thing turned out SO SO good!

Don’t Have An Ingredient? Here are options:
If you don’t have some of the ingredients, you can easily replace them with similar ones.
- Sausage – ground beef, chicken or turkey or cooked meat,
- herbs – whatever you have,
- kale – spinach or arugula;
- peppers – zucchini or you can even omit them.
I hope you enjoy the sausage veggie pasta, here’s the recipe:
