You’ll need seven ingredients and a blender to make these delicious healthy oatmeal blueberry pancakes! Made with gluten free oats, this is a great healthy pancake recipe for fluffy gluten free flourless blueberry pancakes and they are just wonderful!
When you try this easy breakfast idea there’s a high chance you’ll end up wanting to make it every single morning. And that’s okay, because the pancakes are ready in about 10 minutes and made with healthy ingredients. Honestly, I make these any time of day, whenever I crave something sweeter.
This is a recipe for one, so feel free to double it or adjust accordingly for as many people as you will want to share the blueberry pancakes with. Or for as many servings as you’d like to enjoy.
Healthy Oatmeal Blueberry Pancake Ingredients
Oats. These pancakes are flourless and instead of flour, we’re using oats. You can go for quick or regular oats, or even use ground oats.
Yogurt. We need some yogurt in the recipe to make the pancakes lighter and fluffier. The yogurt reacts with the baking soda and makes the tiny bubbles that give the pancakes their fluffiness (explained like a true chemist). You can use any type of probiotic yogurt, dairy-free varieties made with coconut or cashews will probably work as well.
Baking soda and baking powder. I find using both somehow makes the pancakes even better.
Egg. The egg is necessary because it’s the binding agent in this pancake recipe.
Vanilla. Some vanilla or if you desire cinnamon for the aroma.
Blueberries. I’d only use fresh blueberries in this recipe, since frozen might make the batter runny and will change the color of the pancakes.
Maple syrup or honey. Add in a little bit of sweetness to the pancakes, you can always top them with more!
How To Make Healthy Oatmeal Blueberry Pancakes
All you need to make the batter for the pancakes is add all ingredients except for the bluberries to a blender or to a bowl and blend until smooth either in your high-speed blender or hand blender. If using ground oats, you will not need a blender.
Melt in a little bit of coconut oil. Pour in the pancake batter, making smaller sized pancakes. Add blueberries on the uncooked side. Let the pancakes cook until edges look done and bubbles come up.
Then work your way around the edges and flip the pancakes on the other side as well.
Serve immediately and top with some extra blueberries and maple syrup.

Healthy Oatmeal Blueberry Pancakes
You'll need seven ingredients and a blender to make these delicious flourless healthy oatmeal blueberry pancakes! This is a great healthy breakfast idea with gluten free oats that you will want to make again and again!
Ingredients
- 1/2 cup oats
- 2 tbsp yogurt
- 1/3 tsp baking soda
- 1/3 tsp baking powder
- 1 tsp vanilla
- 1 egg
- 1/3 cup blueberries
- 1 tbsp maple syrup
- coconut oil for the pan
Instructions
- Add all ingredients to a blender except the blueberries and blend until smooth. You can also use a hand blender and a bowl or just a bowl and a fork if using ground oats.
- At medium heat, grease a nonstick pan with coconut oil and pour the pancake batter making smaller-sized pancakes (the size of your palm, this will make flipping easier). Top the uncooked side with blueberries.
- Once edges look done and bubbles come up, work your way around the edges of the pancake with the spatula and flip the pancakes. Repeat until you run out of batter.
- Serve immediately with some maple syrup or honey and extra blueberries.
