Banana Oat Muffins With Only 1 Egg
You know what makes me really proud about this recipe? It’s not just the fact that it’s delicious, addictive and actually healthy. It’s the fact that I managed to use only one egg here.
My soul always dies a little when I use eggs for baking. I don’t know why. Like 4 eggs to make muffins? And don’t get me started on the recipes that only use yolk or egg whites. It always makes me wonder: What happens to the yolks? Did someone eat them all and get super high cholesterol? Or did they throw them away? Or did they put them in soups like this one?
We’ll never know!
But here, you don’t need to guess – it’s just one egg per batch and so much deliciousness. These flourless oatmeal muffins have a great banana flavor, but it’s not that over the top banana flavor.
They’re also nutty thanks to the almond butter and perfectly sweet (but not overly sweet!). I used only one banana and as mentioned – one egg and the recipe made 6 tasty healthy banana muffins. So you know what to expect – double or triple to get as many servings as you need!
Oatmeal Banana Muffins Ingredients
Here’s what goes into these healthy banana oatmeal muffins:
- banana
- oats – use quick oats and skip the flour
- egg
- almond butter
- some honey or maple syrup
- yogurt
- vanilla
- baking soda
- flax meal
- salt
- butter or coconut oil
I know, it’s a long list, but these foods are wholesome and you probably already have most of them at home, they’re pretty affordable as well. Plus you need no fancy equipment – a fork and a bowl can do wonders here. So, get those ingredients out and let’s make some healthy oat banana muffins!
How To Make OATMEAL Banana Muffins With NO Flour
Mash the banana in a bowl.
Add the egg and all the wet ingredients: yogurt, vanilla, honey, almond butter, butter the almond butter. Then stir in the oats and the dry ingredients: baking soda and flax meal. Add a tiny pinch of salt.
Mix.
Line a muffin pan with muffin liners and fill each cup with the muffin mixture.
Then make the crumble by mixing oats, butter, honey and salt in a small bowl.
Crumb this mixture between your fingers and top each muffin with the crumbles.
Bake at 180C/350F for around 25-30 minutes. Be sure to check on your oat banana muffins at around 20 minutes, because ovens are different. The muffins will be ready when a toothpick comes out clean after you insert it into the muffin.
Options
If you don’t have some of the ingredients in the recipe, do not be afraid to make changes.
As I mentioned, you can completely omit the crumbly top, if you don’t feel like it.
You can also add in some roughly chopped nuts for some crunch inside the muffins.
Another simple change you can make is using a different seed or nut butter. You can also add in dried fruit or chocolate chunks to the batter if you want to change things up!
