Healthy Ground Beef and Potato Bowls Bowls
Made with ground beef patties, simple potato wedges, a garlicky yogurt sauce and a fresh tomato-based salad these dinner bowls are:

Make these whenever you feel like you need to eat some red meat. You know, sometimes, you just crave it and have to have it. Instead of a burger with fries, make this! It’s pretty painless to make and much much healthier.
Ingredients For Ground Beef And Potato Dinner Bowls
Lean ground beef. If you don’t eat ground beef, you can substitute for whatever ground meat you enjoy most.
Herbs and spices. We’ll be using some ground cumin and dried mint in the patties, and some fresh parsley and dill in the garlic sauce and the salad.
Potatoes. You can use whichever variety you enjoy, even sweet potatoes will be good, as long as you like them.
Yogurt. I suggest to use probiotic yogurt for the gut health benefits, but any type of plain, non-flavored yogurt should work.
Fresh salad vegetables. The salad I went for is tomato and cucumber based. I also added in some parsley, arugula, onion and peppers for some extra vitamin C and flavor.
Olives. I always like something extra salty in my meals. For this bowl I highly recommend olives or pickled jalapenos for some added spice!
How To Make These Ground Beef Potato Bowls
You have a few options here, but for me, your best bet is to use the oven for the beef patties and the potatoes.
We start by cutting up the potatoes in wedges and then and boiling them in some salted clean water for about 10 minutes.
Preheat your oven to 350F.
During the 10 minutes when you’re boiling the potatoes, you have some time to flavor the ground beef with cumin, mint, a good pinch of salt, black pepper and optionally – a tsp of chili powder. Shape smaller patties with your wet hands and place onto a baking sheet lined with parchment paper. The parchment paper makes clean up easier and helps prevent the patties from sticking to the baking sheet. Bake for about 15-20 minutes, flipping once. Or until done to your liking. I like mine very well done and I left them a little over 20 minutes, but then again every oven is different.
Line another baking pan with parchment paper. Grease the parchment paper with some olive oil. When the potatoes are done boiling, drain them and transfer gently to the baking sheet, spreadng them in a single layer. Sprinkle salt, spray some olive oil all over and bake in the upper part of the oven for about 10 minutes, turning the potatoes once to allow even baking.
While the potatoes and the beef patties are cooking, you can make the salad and the yogurt garlic sauce. To do this, chop dill, parsley, tomatoes, cucumber, pepper, onion, parsley and arugula and peel and mince garlic.
Add dill, yogurt, salt and garlic to a small bowl and mix together to make the yogurt sauce.
To a larger bowl add tomatoes, cucumber, pepper, onion, parsley, arugula, olive oil, salt and pepper and toss to make the salad.
Phew, now it’s all done and you can serve yourself and other as well! Fill a bowl with potatoes, salad, patties, don’t forget some olives and then place yogurt sauce in the middle.
Great meal prep dinner idea!
These bowls are actually perfect for meal prep too! You make it once, you get 3-4 servings, here’s how to adjust the recipe:
- Make the potatoes, ground beef patties and yogurt sauce as described. Add each to a separate airtight container and store in the fridge. This will allow you to reheat the meatballs and the potatoes on the stove, in the oven or in the microwave without ruining the salad or the sauce.
- Add whole cherry tomatoes, chopped peppers, chopped onions, chopped parsley, arugula, and cucumbers to an airtight container and store in the fridge. When it’s time to serve, take out as much as you wish and toss with olive oil, salt and pepper.
Gluten Free And Soy-Free Recipe
You can enjoy these ground beef potato bowls even if you have several dietary restrictions. They’re gluten-free, soy-free, grain-free and nut-free. To make them dairy-free you can use this cashew garlic sauce in place of the yogurt. For a low-carb version, you can sub the potatoes for sauteed zucchini.

Yogurt Garlic Sauce
- 1 cup yogurt

- pinch of salt
