Looking for meal prep friendly healthy chicken dinner recipes that make themselves? This recipe for easy baked chicken drumsticks with potatoes is what you need.

Seriously, it’s one of my go-to easy dinners. It takes a little bit of time, but your work will be done within 10-15 minutes and you can make a lot. Well, as much chicken and potatoes as you can fit onto that sheet pan.
I often meal prep this chicken recipe for the week ahead and enjoy the leftovers for lunch or dinner with tzatziki or yogurt garlic sauce and salad. It is SO good and super satisfying and it’s really healthy too!

Baked Chicken Drumsticks and Potatoes Ingredients
I think the first two ingredients are obvious, but here’s the list of the things needed to bake the chicken:
- chicken drumsticks
- potatoes (new potatoes or sweet potatoes are also fine)
- spices: paprika, oregano, salt, black pepper (as desired)
- onion
- water
- olive oil
And that’s pretty much all! You can do any kind of spices you like on the chicken drumsticks, I like mine simple. But if you wish – add a little bit of cumin, turmeric or chili powder for even more flavor.
How To Make Baked Chicken Drumsticks And Potatoes
Honestly, I always switch things up a little bit, but when it comes to baking any kind of meat in the oven, the number one rule is: slow and steady wins the race. So here’s what to do for the chicken drumsticks:

Wash the chicken drumsticks and add them to a mixing bowl with paprika, oregano, black pepper, salt and some olive oil. Rub them, so that they’re evenly coated with the spices.
Preheat the oven to 400F/200C.

Cut the onions into circles and layer over a baking sheet. Add the cubed potatoes, pinch salt and pepper, then cover the sheet pan with a little bit of water.

Spread the spiced chicken drumsticks between the potatoes, can go over the onions.
Cover the pan with foil or another baking pan of the same size.
Bake for 10 minutes at 400F/200C, then reduce heat to 340F/170C and bake for 50-55 minutes, flipping once.
Lastly, uncover and cook for 15-20 more minutes at 420/210C to get more color and crisp on the chicken, flipping once.

How To Serve
You can serve the baked chicken and potatoes recipe as is, or you can do what I did and serve with a salad and some tzatziki. This is the cabbage salad I used and here’s the tzatziki recipe I always make.
