If you wish to make the sandwich filling creamier you can add a tsp of cream cheese like I did for this sriracha tuna quesadilla. I wanted to keep this one on the healthier side, so I used what I had in the fridge and pantry and this is what I came up with. Feel free to modify the recipe any way you wish!

How To Make The Grilled Cheese Tuna Sandwich

Mix the tuna with thinly chopped tomato, tomato paste, pickled jalapenos, garlic, scallions and dill until you get a nice chunky spread.

Spread this mixture over a slice of bread.

Then top with cheese.

And then top with the other slice of bread to make a sandwich.

Toast or grill in a pan with olive oil at medium heat until golden brown on both sides, flip carefully.

Once golden brown, place onto a cutting board and slice in halves.

Enjoy with some salad on the side. I served with avocado, arugula, and cherry tomatoes.

Customize It

You can customize this sandwich recipe any way you wish, here are some examples of what I would try out:

  • mix in cream cheese with the tuna spread to make it creamier
  • add in some sliced or mashed avocado to the sandwich
  • try other herbs like basil, oregano, cilantro or parsley
  • use tortillas instead of bread and turn it into a wrap/ quesadilla

That’s just a few examples, you can pretty much change and add things as you wish, it’s your sandwich after all!

Ingredients

  • 1/2 cup tuna, canned, drained
  • 1 small/medium tomato, chopped
  • 1 1/2 tbsp tomato paste
  • 2 tbsp pickled jalapenos, chopped
  • 1 tbsp dill, thinly chopped
  • 1-2 garlic cloves, minced
  • 2 tbsp scallions, thinly chopped
  • 1/3 cup cheese, shredded*
  • 2 slices bread**
  • 1 tsp olive oil

Instructions

  1. Mix the tuna with thinly chopped tomato, tomato paste, pickled jalapenos, garlic, scallions and dill until you get a nice chunky spread.
  2. Spread enough of this mixture over a slice of bread (servings will depend on how large the bread slices are)
  3. Then top with cheese of choice.
  4. And then top with the other slice of bread to make a sandwich.
  5. Toast or grill in a pan with olive oil at medium heat until golden brown on both sides. I like to press down the sandwich with the spatula for a few seconds while it's "grilling", so that the cheese melts better. Flip carefully, so that the tuna mixture doesn't come out of the sandwich (can happen if overfilled).
  6. Take out, slice and enjoy with some salad on the side. I served with avocado, arugula, and cherry tomatoes.

Notes

*I didn't shred it, but make sure it covers the tuna mixture

**Or as needed I had two very large slices of bread and it made two servings with just two slices. Use and fill as needed!
