Okay, I get it: What in the world is an easy tomato cucumber salsa?

It’s a Mediterranean appetizer. Fine, to be honest, it’s basically a tomato cucumber salad, but chopped really thinly, so that you can dip, put it on toasts or add it to pita pockets. That third one is exactly what I did this summer and now you know. Time for a scary movie and a recipe that’s a great appetizer, filling for things or just healthy snack.

You can use it on bread with hummus or feta or other cheese, add it to wraps or bowls, or top grilled fish, meat or even eggplant with it. Chopped like this, it’s just very practical. And I’m not the best chopper, you can probably do much much better than me at making these vegetables tiny and invisible to the naked eye.

Soon, the pita pocket recipe is coming too; it was one of the best things I’ve eaten lately. Probably because I hadn’t had bread in a while, but it’s not just that. It was meat, my zucchini appetizer, this salsa and pepperoncini paste. Let’s hold that saliva, first it’s time for the tomato cucumber salsa. It’s great for a barbecue or grill party or just a party too.
