If you love salmon, garlic and pasta – this easy salmon recipe is for you! It’s a 20-minute salmon pasta that everyone at your dinner table will devour.
20-Minute Salmon Pasta
So one of my favorite things to eat is pasta. How can you not? It’s easy, it’s DELICIOUS and it’s super quick. And when that pasta is creamy and smells like garlic, who am I to say no to that deliciousness.
Plus this one is borderline healthy. It’s got the salmon in there, the vegetables, the garlic and then there’s the actual pasta and some cream cheese. If you want to make it healthier – use whole grain pasta, it will work just as well!
Here’s the quick recipe.
- 6 oz / 180g salmon
- 6 oz / 180 g tortellini, refrigerated
- 1/2 cup milk
- 2 tbsp cream cheese
- 1 tsp tomato paste
- 1 tbsp green pesto
- 2 garlic cloves, minced
- 1/2 cup cherry tomatoes, chopped
- 2 tbsp fresh cilantro, chopped (optional)
- 2 Tbsp basil, chopped
- 1/2 cup mozzarella, shredded
- Parmesan cheese
Cook the pasta according to instructions on the package. Then drain it.
In a non-stick pan, saute the salmon for 2-3 minutes, add some water if needed. Stir in the garlic, the cream cheese, the pesto and the tomato paste. Add 1/2 of the milk and stir, breaking the salmon apart. Cook for 3-4 more minutes creating a creamy and garlicky sauce. If the sauce starts getting too thick - use more milk and stir. Add a bit of salt.
Add in the tomatoes, cilantro (optional), basil and the mozzarella cheese. Stir again.
Drain the pasta and add it to the pan, stirring consistently for about 2-3 minutes and make sure to cover everything in the sauce.
Top with fresh basil leaves and Parmesan cheese.
