Don’t we all just love quesadillas? They taste amazing, are so fast and so versatile. Today I’m sharing 14 of my favorite quick and easy quesadilla recipes for dinner, lunch or even breakfast that you can make at home in no time.

How To Make Quesadillas
All of the quesadilla recipes below are super easy and you can make most, except for one, in about 10-15 minutes using a pan on the stove! You can also easily make them on the grill during summer.
Step 1: Prepare the Quesadilla filling.
I always make sure to make a filling that has a binding component and is “stable”. Be it cream cheese, or tomato paste or even mashed beans, many times I like to mash many of the ingredients together. You don’t need to always do this, but when you have ingredients like chopped vegetables or beans, I highly recommend it. Filling your tortillas this way will help keep the quesadilla together when you’re flipping it to toast on each side. I highly recommend this method
Step 2. Spread the filling on one half of the tortilla.
And do not overfill. You will also add some extras – avocado, shredded cheese, some spinach or roasted zucchini…You can add these ingredients directly when you’re making the filling in the first step, but it works this way. This will not affect the taste, just slightly the appearance when you slice your quesadilla.
Step 3. Fold the quesadilla in half.
Press it really well with your hands, to make sure the filling isn’t going anywhere. I really admire people who can flip a quesadilla that is made with two tortillas, unfortunately, I’m not one of them. The easiest way for me is to fold a quesadilla in half and it just always works.
Step 4. Toast the quesadilla on both sides
…until golden brown. I always like to add a little bit of oil or fat to the pan when toasting the quesadilla (even though it’s nonstick). This makes the tortilla crispier and prevents burning. You want to let your quesadilla get slightly brown on one side, flip it and toast until golden brown. If you’ve added cheese, it should be melted at this point.
Step 5. Serve
Take the quesadilla out, place it on a cutting board, and slice. Serve with your favorite quesadilla dipping sauce or some avocado for a healthier option.
Quesadilla Filling Ingredients
There are many options when it comes to quesadilla fillings, it basically depends on what you’re going for and what you have at home, here are some great filling ingredients:
- Cooked vegetables or vegetables with low water content. You do not want to use too many fresh vegetables and juicy ingredients, as your quesadillas can get mushy.
- Cooked meat or fish like leftover chicken, ground beef or even canned tuna
- Legumes like cooked chickpeas, black beans or even lentils
- Spices and fresh herbs
- Cheese – I love experimenting with different types of cheeses in quesadillas (surprise they all work – even feta and gorgonzola as you’re about to see!)
- Sauses like sriracha, cream cheese, hummus or even tomato paste

These are great when you want to use up some leftover chicken!
Not gonna lie, this is one of my favorite quesadillas. Whenever I have chicken, cream cheese and some tortillas, I make it. It’s so good! Spicy, flavorful, fresh and cheesy at the same time. And ready in 15 minutes. The recipe is here.
I know it sounds weird, but you’ve got to try this spin on a chicken quesadilla when you have the ingredients together. It’s filled with garlic, spices and it’s so perfect and filling. The recipe is here.

- 1 cup shredded chicken
- 2 Tbsp cream cheese
- 1 1/2 tbsp tomato paste
- 3 garlic cloves, minced
- 1/3 tsp cumin
- 1/3 tsp coriander
- 1/2 tsp crushed red pepper

- 1/2 cup chopped arugula
- handful basil leaves or some chopped dill
- 1/2 cup shredded cheese
- 2 flour tortillas
- In a small bowl mix the cream cheese, garlic, tomato paste, cumin, coriander and crushed red pepper, a tsp of water until smooth.
- Add the chicken, basil (or dill), chopped jalapeno and the arugula to the mix.
- Spread 1/2 of the mixture on one half of a flour tortilla and top with cheese of your choice - mine was mozzarella. Repeat for the other tortilla.
- Fold each tortilla in half and toast in a non-stick pan with olive oil until golden brown. Flip and toast on the other side as well.
- Slice in 3-4 pieces and serve like this, or with guacamole.
