Make feta pasta low-carb and gluten-free while using up a zucchini. Don’t know about you, but this has been a goal of mine. In fact, it happened just a few weeks ago. They say: DREAM BIG! Well, those dreams turned into a flavorful feta zucchini noodles recipe that is incredibly tasty. It’s the perfect healthy light, low-carb and low-calorie easy dinner!

If you want to make more of this Mediterranean-inspired meal, you can by using a larger pan and more of the ingredients. Otherwise, the one person who gets to eat it out of your friends and family will be a happy one.
You can modify the recipe, anyway you wish. For example, you serve the feta zoodles as a side, add in more protein like chicken or shrimp, try different herbs or add in some chilies for extra spice. Either way delicious!
Here’s the recipe and you’ll find the instructions with photos below!

Easy Feta Zucchini Noodles
The low-carb version of feta pasta and the best way to use up zucchini! This quick and easy feta zucchini noodles recipe is incredibly tasty and makes the perfect healthy, light, low-carb and low-calorie weeknight dinner idea!
Ingredients
- 1 zucchini, in zoodles
- 1 scallion, thinly chopped
- 3/4 cup tomatoes, chopped
- 1 tbsp olive oil
- 2 tbsp feta cheese, crumbled*
- 2 garlic cloves, minced*
- 1 tbsp olives, pitted and chopped
- 1 tbsp capers
- a pinch of dried oregano
- 1 tbsp fresh herbs - thyme, basil, parsley, or fresh oregano (thinly chopped)
- a handful of arugula
- 1 tsp tomato paste
- Salt and black pepper to taste
Instructions
- The first step here is making the zucchini noodles aka zoodles - you cau use a spiralizer for this one. I used a handheld one and it worked pretty well, but I'm sure a machine can do a much better job. You want to remove the seeds for the feta zoodles though.
- Then finely chop tomatoes, scallions and mince garlic.
- Heat a pan and sauté tomatoes in olive oil for 1-2 minutes, so that they release some juices and make a sauce. Add in the tomato paste, the garlic cloves and scallions. Stir for about a minute, then add in the olives, capers, herbs and the crumbled feta cheese.
- Stir through the zucchini noodles and the arugula for about a minute, just enough to heat up and serve immediately with some black pepper and more feta cheese on top.
- Enjoy!
