I know, asparagus may not be in season anymore, but I have to do it. I just have to share this easy chickpea asparagus salad recipe, as it’s tasty, filling and it’s basically the perfect healthy lunch ever. Made with canned chickpeas, roasted or sauteed asparagus and feta cheese, this salad is ready in about 15 minutes!

Easy Chickpea Asparagus Salad Ingredients

Canned chickpeas. Or any kind of cooked chickpeas you enjoy. Rinse and drain them and they’ll be ready to go into the salad.
Asparagus. I have a quick and easy recipe for sauteed asparagus and this is how I prepared it for the chickpea salad as well. It takes around 10 minutes.
Raw vegetables. Lettuce, tomatoes, basil, scallion, garlic and cucumber also make it into the salad to make it more colorful, flavorful, healthy and refreshing!
Olives and feta to add creaminess and saltiness, no need for fancy dressings!
Olive oil, salt, pepper and lemon juice to taste…speaking of dressings, make it simple and to taste! I actually didn’t use lemon juice, but have a taste and if you decide – add some to your salad!
How To Make The Asparagus Chickpea Salad

It’s easy! After you’ve washed and chopped all the veggies, sauteed the asparagus and rinsed and drained the chickpeas, it’s time to add them to a large bowl.

Then toss and add the feta, olive oil, salt, pepper and lemon juice to taste!
How To Serve
You can serve this wonderful chickpea salad as is for lunch or dinner, or you can have it as a side with fish, meat or falafels!
