These easy beef burritos come together in no time and are loaded with spices, vegetables and flavor! A simple, healthier and easy dinner idea that you need in your life!
What’s Inside These Beef Burritos
I was in a hurry when making these, so I skipped over ingredients like rice and beans, but if you want to and have some cooked – you can definitely add these to your burritos too!
Ground Beef. Use lean ground beef or any other type of ground meat you enjoy. Turkey or chicken will work just as well.
Spices. Cumin, black pepper, chili flakes, oregano are some of the herbs and spices we add to the filling of the burritos.
Vegetables. Thinly chopped cauliflower, bell peppers, zucchini and even some spinach make it into the filling as well.
Sauce. You can’t really see it in the picture, but I did dip this burrito in some garlicky yogurt sauce and it was just amazing. Highly recommend the yogurt sauce or another yogurt- or sour cream-based garlicky sauce.
How To Make These Easy Beef Burritos
Now, that’s super easy and will take you around 30 minutes.
Start by making the filling. Cook your beef with olive oil and spices you enjoy. As I mentioned I used cumin, chili flakes, black pepper and oregano. In 4-5 minutes add in the bell pepper, some garlic, some scallions, zucchini and thinly chopped cauliflower. Reduce the heat and cover with a lid to allow the ingredients to cook through for a few minutes. Stir in the spinach, add some tomato paste and a squeeze of lemon. Turn the heat off.
Make the yogurt garlic sauce by mixing a cup of yogurt with garlic, salt and thinly chopped dill.
Assemble the burritos. Place the ground beef filling in the middle of a tortilla, then some cheese on top, yogurt garlic sauce (or another sauce of choice) and guacamole on top and fold the tortilla on each side like an envelope.
Toast the burrito in a nonstick pan with some olive oil until golden brown. This will make it crispier and help seal the tortilla, so that the filling stays inside.

- 8oz / 220g ground beef
- 1 tbsp oregano, dried
- 1 tsp cumin
- 1 tsp black pepper
- 1 1/2 tsp chili flakes
