If you’ve got some beans, you’ve got breakfast covered! At least with this super easy beans on toast recipe which you can put together in 15 minutes. You’ll need some already cooked or canned beans, some tomato and tomato paste, spices as well as bread and feta cheese.

Well, if you don’t like feta, a few olives on top of the beans on toast will do as well. I’ve got many ideas here. This tzatziki, in particular, has caught my attention, I think it will do really well with the beans. And some salad on top. Like, lunch is ready. But here’s what you need for the very simplified version:
Beans On Toast Ingredients
Beans. Cooking dry beans takes about 300 years, so we’ll go with already cooked or canned beans. I actually, do wait the 300 years every other week, and make a huge pot of cooked beans that I portion out in ziploc bags and freeze. So, use whatever cooked beans you have for the recipe.
Tomato and tomato paste. Beans and tomatoes are like that…I’m keeping my fingers linked. So we’ll use some fresh and some paste.
Spices. Mint, curry powder, crushed red pepper were some of the spices I used here, but you can also use oregano, cumin and even coriander if you wish. Make it your own!
Onion and garlic. We cannot make beans without onion or garlic. And in this case, we need both!
Avocado. I spread some avocado on the toasted bread before adding the beans and I really liked the combo. But if you don’t have avocado, you don’t have to add it.
Feta. For some added saltiness and creaminess. As mentioned before, you can also go for thinly chopped pitted olives.
Bread. Use whichever type of bread you like for toast! I used regular wholegrain bread. You can either toast it on the stove or in a toaster.
How To Make Easy Beans On Toast
To make these easy beans on toast, we’ll be quickly cooking the beans with the tomatoes and the spices.
The first step here is to wash, peel and chop the vegetables – like tomato and onion, mince the garlic.

Saute the onion in olive oil with the curry powder and crushed red pepper for about a minute.

Then add in the thinly chopped tomato, then the mint and the garlic and saute for another 2 minutes.

Add in the tomato paste, the cooked beans and some water.

Stir and cover with a lid to cook for 2-3 more minutes. Remove the lid and cook for 2 more minutes.

Now while this was going on, you had to also toast some bread. I really hope you did it, because it’s almost time to put the beans on their bed of bread.

Mash the avocado with salt and pepper as well as one garlic clove, then spread it over the toasted bread.

Top with the beans

and some crumbled feta cheese or thinly chopped pitted olives.

Enjoy immediately!
How To Make It Even Better
So when I was shooting the recipe, I was really running low on vegetables. Otherwise I’d make a small salad with thinly chopped cucumbers, peppers, fresh herbs like basil or mint or parsley as well as arugula to top the beans. Yes, it would be messy, but also delicious and will add more texture and contrast to the tasty cooked beans. So, if you have some fresh veggies – use them here!

Meal Prep
If you want to have an easy option for lunch or breakfast throughout the week – make more beans and store in the fridge for 3-4 days in an airtight container. You can use them on toast, in bowls, with some tzatziki…Everywhere. Just reheat on the stove or if you’re fearless – use the toxic microwave.
