Easy Cucumber Salad Ingredients

The main ingredient here is (as you guessed) – cucumbers. You can peel them, but I decided to keep the peel on, since I knew they weren’t sprayed with anything.

Other than that you’ll need:

  • fresh mint
  • garlic
  • olive oil, salt and pepper

and if you wish you can even invite some lemon juice to the salad party. I’m not a huge fan of lemon in salads, so I didn’t add it, but most people are. So feel free to use as you please.

How To Serve

I served this salad with some baked fish that I had made a few days ago (just fish fillets with salt, pepper, olive oil – bake, then brush with some garlic, herbs, lemon juice and a little bit olive oil, SO good).

This cucumber salad will also go well with meat, in wraps, bowls, falafels and even cooked rice- or bulgur-based dishes.

How To Customize

There are many, many ways to customize this salad. Here are a few options that I’m thinking about:

  • with leftover chicken for a filling lunch
  • add feta cheese for some extra saltiness
  • make it more filling by adding some rice, quinoa or chickpeas
  • use a different fresh herb if you don’t have mint, dill will be especially successful here.
