The greenest salad I’ve made in a while – a cucumber, avocado and arugula salad! Perfect for summer, this is a delicious and super easy healthy salad recipe that you can eat with pretty much anything. This is a vegan, low carb, gluten free and paleo salad recipe.

This salad is the perfect side dish and it goes with anything! It’s a great base for healthy bowls and can be used in wraps like this one too.
I had mine with the herbed chicken and cannellini and it was a good day. It filled me up, but I also had a lot of energy to do some work in the afternoon as well.

The title pretty much says it, but here are the ingredients for this delicious green salad:
- Some crunchy cucumbers. I’m currently growing my own, but they’re not ready yet, so I bought some cucumbers. I always make sure to choose firm and thinner cucumbers, as they’re crunchy and taste better.
- Ripe and creamy avocado. Haven’t had much luck with avocado lately, but this one was a winner!
- Fresh garlic (you can also use old garlic, if you’re not growing your own garlic yet!)
- Arugula. I love arugula and have plenty of it in my garden right now, so this salad is a great option if you’ve been growing your arugula and looking for ways to eat it too.
- Salt, vinegar and olive oil

Ingredients
- 2 cucumbers, peeled and chopped
- 1 cup arugula
- 1 avocado
- 3 garlic cloves
- 1 tbsp olive oil
- 1 tsp vinegar or lemon juice
Instructions
- Put all ingredients in a bowl, add salt and mix together.
- Optionally you can sprinkle some toasted sesame seeds on top.
- Serve immediately.
Notes
I also threw in some lettuce I had, so that's optional too!
