To meal prep, this chicken gyros recipe simply cook the chicken as described in the recipe and prepare the tzatziki. Then keep them in separate containers. Slice cucumbers, onions, use whole cherry tomatoes and olives instead of preparing the salad (it will not taste great even within a day, because it gets soggy).

Making it easier
Homemade is of course always better, but if you’re someone who has absolutely no time, you can cheat with this recipe and get store-bought tzatziki and pre-cooked chicken and assemble this for a quick 10-minute dinner or lunch at work.
- 1 pound / 450g chicken, skinless, boneless thighs
- 1 tsp rosemary
- 1 tsp black pepper
- 1 tsp coriander
- 1 Tbsp olive oil
- 1/2 cup olives, pitted
- 1 cup Greek yogurt
- 3 garlic cloves, minced
- salt to taste
- 1/3 cup thinly chopped cucumber
- 1 Tbsp dill, chopped (optional)
- tomato cucumber salad
- 4 tortillas or pitas
Chop the chicken in bite-sized pieces and cook it in a pan with olive oil, the rosemary, black pepper, 1 garlic clove and coriander stirring every now and then until cooked through (about 7-8 minutes).
Prepare the tzatziki by mixing plain Greek yogurt with 2 garlic cloves, the thinly chopped cucumber, dill (optional) and add salt to taste.
Make this tomato cucumber salad in a separate bowl.
Time to serve: Heat up some tortillas or pitas and fill them with each - some chicken, salad, olives and tzatziki on top. Serve immediately or follow the meal prep suggestions provided.
