I made this breakfast panini sandwich when I was traveling recently and I can tell you, I’m still thinking about it! Like I’d make this panini recipe and eat it too every day for breakfast!

You know how when you go to an Airbnb you buy food and then you have to eat all of it within a short period of time. Maybe you’re not like that. But I am. I hate wasting food and personally wouldn’t eat things others left in my place. As I mentioned, maybe you’re not like that. But I make it my mission to eat all of the food we bought.
And so recently, the mission was to make the most of the ham, egg, cheese and bread I had bought while traveling. Thus this amazing breakfast panini sandwich was born. It was SO tasty and so I had to take a picture of it with my phone, because I didn’t get the camera this time.
I’ve been making a variation of it ever since, whenever I have some bread and cheese and it’s always delicious! Here’s what you need:
Breakfast Panini Sandwich Ingredients
Eggs. It’s breakfast time, so naturally we’ll add some eggs to the sandwich.
Ham. I always try to get nitrate-free ham, as it’s supposed to be healthier. That said, you can also use salami or even turkey.
Cheese. Go for cheddar or mozzarella cheese.
Vegetables. Tomatoes, jalapeno, arugula and some basil were the fresh vegetables I had bought.
Bread. I had some pita bread, so this is what I used for the recipe, but regular sliced bread or English muffins will work as well.

How To Make The Sandwich
Prepare the eggs your favorite way. I just scrambled them lightly, adding some salt and pepper.
Slice the bread through the middle and layer ham, vegetables, cheese and eggs on top.
Press them firmly with your hand as to keep them together and then place onto a pan, greased with olive oil.
Toast on each side for 3-4 minutes or until golden brown and toast while pressing the sandwich down with the spatula.
Slice the sandwich in the middle and serve immediately with some extra vegetables (tomatoes, avocado, basil, arugula) on the side!
