French toast is great, right? It’s so comforting and delicious and you get to use up some old bread…But what if you have some old rotten bananas to go with that bread? Well, you can make this super easy and delicious banana french toast recipe! It’s a tasty breakfast recipe that you can make in around 10 minutes with basic ingredients.
Banana French Toast Recipe
Okay, first of all: What is it? Is is a banana stuffed french toast is it banana bread, what is it? None of that. It’s pretty much french toast, but the batter is made with banana and it’s very tasty!
Banana French Toast Ingredients
To make a banana French toast you don’t need much really:
- some bread
- an old banana
- an egg
- coconut oil or butter
- vanilla or cinnamon or both
How To Make Banana French Toast
Batter. The first thing you need to do is prepare the batter for your toast. You mash a banana until it’s very smooth and no lumps appear. Then you add an egg and some cinnamon and vanilla. If you would like you can also add some milk of choice to that batter. You whisk all that together and you’re ready to
…Dip. Dip your slices of bread in that batter, making sure to coat well everywhere. Don’t let the toast soak too long in the batter, because it will start to fall apart.
Fry. Then it’s time to heat up a pan, add some coconut oil and start “toasting” your banana French toast. You’ll actually be frying it for a few minutes on each side until nicely golden brown. Keep the temperature low-medium to prevent your toast from getting too dark too soon.
Serve with some honey or fruit of choice and enjoy!
And that is it! It’s simple, it’s delicious and it’s very easy to make!
As you can see, I failed to remove the lumps from my bananas and this then lead to uneven coating and to my toast getting too dark in some areas and underdone in others. The next time I made it I used a hand blender for the batter and it lead to a smoother texture of the batter and better, more even coating of the bread – so something to keep in mind!
- 2-3 slices of bread
- large old banana
- 1 large egg
- 1 Tbsp coconut
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- Mash the banana well until there are no more lumps. You can use a fork or a masher to do this.
- Add the egg, vanilla and cinnamon.
- Mix everything together.
- Slice the bread in 1/2, then dip each piece in the batter to cover well each side.
- Immediately after fry in a heated non-stick pan with some coconut oil for 1-2 minutes on each side until golden brown.
- Serve immediately with some fruit or other toppings of choice!
