All you need to do is bake some salmon, cook rice, cut up some green vegetables and serve with your favorite sauce! I didn’t make a special dressing and usually just add some wasabi, tamari sauce and/or chili oil with peanuts that I get from the Asian store.

These avocado salmon bowls have become one of my favorite go-to things to eat whenever I crave something like sushi, but also fried rice and want to keep it sorta healthy.

Avocado Salmon Bowls Ingredients

You basically need three things to make these:

  • avocado
  • baked salmon – you can also air fry it or use smoked salmon to make this meal even quicker
  • rice – whatever type of rice you like, quinoa will work too

And that’s the base!

Customize them

To add some flavor and health, you can also add these:

  • thinly chopped lettuce, spinach or cabbage
  • stir-fried kale or broccoli
  • thinly chopped green onions
  • thinly chopped chilies or jalapenos
  • fresh herbs like cilantro, basil or parsley
  • cucumbers or raw cut-up carrots
  • toasted sesame seeds
  • some grated ginger or if you wish – pickled
  • Asian chili oil with peanuts, tamari sauce, sesame oil, sriracha and/or wasabi – add these to your liking. I usually just have them on the side and add on top of the rice whenever I feel I need them.

with roasted vegetables (honestly would’ve preferred them raw), still good though

I also tried the recipe with roasted vegetables, but honestly – I did not love them in there. I highly recommend sticking to the raw green vegetables or stir-fried greens like kale, cabbage or broccoli. These just go so much better with the rice, avocado and salmon!

How To Make The Salmon Avocado Rice Bowls

I think the biggest deal with this easy meal prep recipe is cooking the salmon. You can grill it, sear it in a pan, air fry it or bake it. I usually bake it.

To get started with he salmon avocado bowls, preheat the oven to 400F/200C. Then just grab the salmon fillets and place in a single layer over a greased baking sheet. Add salt, pepper, olive oil and a squeeze lemon juice (if you wish). Rub the salmon with these. Bake for 12-13 minutes and broil for the last 2-3 minutes.

While the salmon’s baking, cook up some rice according to the instructions on the package. Usually I just add rice with water in ratio 1 : 1 1/2, bring to a boil, then reduce heat to low and simmer with lid on for 10-12 minutes. Turn the heat off and let the rice sit to absorb any moisture.

Now you’ve got the two most “difficult” ingredients down and it’s time to work on those greens. For this, get some ripe avocados and good cucumbers. Optionally you can thinly chop some lettuce or cabbage as well as some fresh herbs.

You can also roughly chop the cabbage or some kale and saute for a 2-3 minutes with olive oil and roughly chopped garlic.

Add everything to a bowl and serve with your favorite sauces on the side. I usually use a combo of tamari, wasabi and sesame oil and sometimes mix them before adding. Sometimes I’d also add in some minced garlic and ginger. And I love a little bit of chili oil with peanuts over the rice too!

Enjoy!

Meal Prep

I feel like meal prep is self-explanatory here. But I’ll clarify just in case you’re new to making meals ahead of time:

  • cook enough rice to have for the next 3 days
  • bake/grill/sear enough salmon for the next 3 days
  • chop / stir-fry enough vegetables for the next 3 days – here you want to go with vegetables that won’t go bad if you cut them up and leave in the fridge. So nothing juicy. No tomatoes. Stir-fried broccoli, cabbage or kale are a great opiton and so is some chopped lettuce. You can also cut up a few cucumbers.
  • Leave the avocados in a dark place, their fear of darkness will help them ripen fully. You know what doesn’t kill you makes you stronger and creamier. If you’re super lucky and already have ripe and ready-to eat avocados, put them in the fridge until it’s time to open them and use in the bowls.

And just like that you should be good to go for the next few days!
